Pomegranate French 75
It's that time of the year when we don't know what day it is, when Christmas merges into New Years without us even realizing it. That's what happened with this post. I meant to post this for Christmas but too much turkey and cookies got to my head. However with New Years Eve being tomorrow night, I think this drink still checks the boxes. And you need a use for all those decorative pomegranates you've had out for the last month anyways. This cocktail would go well with a festive tablescape to complete the occasion.
Pomegranate French 75
For the simple syrup:
In a small saucepan, combine 1 cup sugar with 1 cup water. Bring to a boil. Add a couple sprigs of rosemary and crush in a couple pomegranate seeds to make it a pale pink. Let it simmer for a 1 minute and then take it off the heat to steep and cool down. About 30 minutes.
To assemble:
In a glass, pour in 1.5 oz gin, 1 oz simple syrup. Stir. Top up with champagne and garnish with a sprig of rosemary and pomegranate seeds.
