Strawberry Rhubarb Lemonade
With the end of rhubarb season and the beginning of strawberry season, it's this well-loved combo's time to shine. While I would usually go all out strawberry rhubarb crumble, I was really craving a light, refreshing drink. With last week's hot Vancouver weather, this was perfect to cool down with in our sauna of an apartment. Though I was sipping on this sans alcohol, this would be so good with a shot of vodka!
Strawberry Rhubarb Lemonade
1/2 cup honey
2 cups sliced strawberries
2 cups sliced rhubarb
8 lemons, squeezed
4 cups water
Combine the honey, strawberries and rhubarb in a small saucepan and bring to a boil. Simmer for 10 minutes while breaking up the fruit. Cool. Strain through a fine mesh sieve. Save the pulp for over ice cream!
Combine, the strawberry rhubarb mixture, lemon juice and water in a pitcher. Serve over ice.
