Rhubarb Spritz

We're about a month into Spring now (wow, did that not go by super fast?) and rhubarb is officially in season! I love anything with rhubarb: pies, tarts, scones and now cocktails! When you stew the rhubarb to make simple syrup, you get the prettiest hue of pink. That combined with elderflower syrup, gin and soda water makes for the perfect rhubarb spritz! If you wanted to go sans alcohol you could totally skip the gin and add a little extra soda for an equally refreshing sipper. I love creating rhubarb ribbons to garnish the drink and chamomile flowers add the perfect Spring touch. Enjoy!

Rhubarb Spritz (makes one drink)

Simple Syrup

• 1 stalk rhubarb, chopped

• 1 cup sugar

• 1 cup water

Combine all ingredients in a small saucepan and bring to a boil. Turn heat down and simmer for 20 minute. Cool and strain.

To Assemble

• 2 oz syrup

• 1 oz elderflower syrup

• 2 oz gin

• soda water

• optional: chamomile flowers and rhubarb ribbons (to create the ribbons simply use a vegetable peeler)

In a glass, combine syrup, gin and elderflower. Stir. Top with soda water and garnish.
