Pumpkin Spice Granola

Homemade granola is one of those things I don't know why I don't make more often. It's so simple and tastes so much better than the grocery store version. Plus, if you know where to buy the right ingredients, can also be so much more economical. While we're almost at the end of October and soon we'll be heading into the season of gingerbread and eggnog, I still think pumpkin has a little more time left. This pumpkin spice granola is perfect to whip up on a weekend and munch on throughout the week. Its cozy flavours and crunchy texture make for a delightful Fall morning breakfast, served with a couple dollops of coconut yogurt.

Pumpkin Spice Granola

2 cups oats

1 cup pecans, broken in half

1 cup pumpkin seeds

1/2 tsp salt

1 tsp cinnamon

1 tsp ground ginger

1/4 tsp nutmeg

1/8 tsp allspice

1/8 ground clove

1/4 cup coconut oil

1/2 cup maple syrup

1/4 cup canned pumpkin purée

1 tsp vanilla

*Note: instead of the above individual spices, you can just use 2 1/2 tsp pumpkin spice.

1. Preheat oven to 350°F.

1. In a large bowl, stir together all of the dry ingredients.

2. In a small sauce pan, melt together the wet ingredients. Pour the wet ingredients into the dry ingredients and mix together.

3. Spread the mixture on a sheet pan lined with parchment.

4. Bake for 20-25 minutes.
